Aloo Phujia


I love Indian food. Although, generally only when I make it myself. I have seldom gone to an Indian restaurant I have enjoyed. Why is that I wonder? Could it be because the restaurants aren't good, or is the Indian food I make just not authentic and it's actually not even Indian food that I like?!

Whether it's really Indian food or not, I love these potatoes!


Aloo Phujia

1 chopped onion (red because they are prettier)
1/2 cup vegetable oil
1 1/2 lbs. potatoes peeled and cut into cubes
1 1/2 tsp. salt
3/4 tsp. cayenne pepper
3/4 tsp. ground turmeric
1/4 tsp. ground cumin
3 tomatoes, chopped

Directions:
Heat oil in a frying pan and light brown the onion.
Stir in salt, cayenne pepper, turmeric, and cumin.
Add potatoes and cook 10 minutes, stirring occasionally.
Add tomatoes, cover pan, and cook until potatoes are soft (about 10 minutes).
