Mediterranean Potato Salad

Since Ray is leaving on a mission to Italy, for the party tonight we've made a bunch of Italian food!

This is my favorite so far:

2 lbs potatoes
1 green bell pepper
1 cucumber, sliced and quartered
1/2 cup sliced red onion
8 oz. crumbled feta cheese
1 lemon, juiced
1/2 cup Italian-style salad dressing
salt and pepper (to taste)

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm. Drain, cool, and chop.
Combine the potatoes, green peppers, cucumbers, red onion, and cheese.
Whisk together the lemon juice, salad dressing, salt, and pepper. Pour over salad and toss to coat.

This is really good if you serve it with pita bread! Or just eat it by itself. Whatever you want!
